I love eggplant parmesan (but it feels heavy)
On my search for a fix of roasted eggplant and tomato sauce. I saw this recipe and had to try it. This recipe starts with simply roasting diced eggplant and adding it to a simple sauce made with fresh cherry tomatoes. It is delicious and makes an elegant first course to a special meal or a main dish for a weeknight meal.
